ICED BUTTERFLY PEA FLOWER, LEMONGRASS & GINGER TEA

We have used our Holy Mother Refresh Botanical Tea to make this very pretty & nutritious iced tea.

Sometimes we just need a little magic in our day, and what could be more magical than a delicious hydrating tea that turns from a vibrant blue colour to a rich purple with the squeeze of a wedge of lime or lemon. Based on the stunning blue butterfly pea flower, with lemongrass, lemon myrtle & ginger, this tea blend isn’t just pretty - it is a wonderful source of antioxidants which can help alleviate inflammation, boost immune function, promote eye health and prevent cancer cell growth. Butterfly pea flowers have also been used for centuries in Ayurvedic medicine to treat anxiety, stress and as a memory booster.

Makes: 12 - 15 Serves

We use all organic or biodynamic ingredients.

  • 2 -3 heaped tbsp Holy Mother Refresh Botanical tea leaves
  • 1 litre of filtered water
  • . fresh mint leaves
  • 2-3 ripe limes cut into thin slices
  • Still or sparkling water and ice to serve

METHOD

Bring water to beginning of boil, remove from heat and stand for 1-2 minutes.

Put tea leaves in a large teapot and pour water over.

Allow this tea concentration to steep for 10 – 15 minutes then pour into heat proof glass bottle or jar. 

Allow to cool for 30 minutes then refrigerate for at least 3-4 hours.


SERVE

To make individual serves, fill each glass with ¼-1/3  of tea concentrate.

Add mint, a few berries, a lime slice, a little ice, and fill remainder of glass with still or sparkling water

TIP: If you’re after a little festive spirit … a wee drop of botanical gin and extra ice transforms this into a delicious cocktail
