Lactation Cookies

Welcoming a new baby into the world is an incredibly special time for any mum, and taking care of your own health is just as important as caring for your little one.  This is a time to nourish your body with nutrient dense foods that not only aid in recovery and healing after childbirth, but also support your overall well-being and energy levels.  If you are breastfeeding, your energy requirements will be significantly higher, as will your fluid needs and requirements for essential vitamins and minerals.  Having nutrient rich snacks on hand is a useful way to nurture your recovering body, so between baby cuddles,  I developed these cookies for Samara to munch on while nursing little Maya.  As well as providing plenty of protein and energy, I included flaxseed for omega-3 fatty acids, grass fed butter for vitamins A & K2 and fennel, fenugreek and ginger to help enhance breast milk volume and supply.

An added bonus is that the boys in the house won’t eat them all…..just in case they start lactating!

 

Makes: 14 Biscuits

We use all organic or biodynamic ingredients.

INGREDIENTS

  • 1 ½ cup almond meal
  • ¼ cup ground flaxseed
  • 1 tsp baking soda
  • 2 tbsp (20g) raw chocolate chips or raw chocolate, roughly chopped
  • 1 tsp ginger powder or 2 tsp freshly grated ginger
  • 2 tsp cinnamon powder
  • 2 tsp fennel seeds or powder
  • 2 tsp fenugreek powder
  • 2 tsp vanilla extract
  • 2 eggs, beaten
  • ¾ cup (100g) grass fed butter
  • 2 tbsp raw honey
  • 1 tsp high quality salt

METHOD

  1. Preheat oven to 180°C
  2. Mix dry ingredients together in large bowl.
  3. Melt butter & honey over low heat
  4. Add eggs & vanilla
  5. Stir wet ingredients into dry mix and combine gently
  6. Roll walnut sized balls onto lined baking tray and press gently to flatten.
  7. Bake for 12-14 mins until golden brown.
  8. Cool on tray, then turn onto rack to finish.

SERVE

Serve cookies with a warm mug of Nurture Botanical Tea.
